Recovery Muffin Recipe

Ingredients:

·       ⅓ cup honey

·       1 ¾ cups white or wholemeal self-raising flour

·       ⅓ cup traditional oats

·       ½ teaspoon bi-carb soda

·       ½ teaspoon sea salt

·       ⅓ cup extra-virgin olive oil

·       2 eggs, preferably at room temperature

·       1 cup plain Greek yogurt

·       2 teaspoons vanilla extract/

·       1.5 cups fresh diced strawberries

·       Optional: 1 Tbsp brown sugar (helps it caramelise a little)

·       Optional: 50g crushed walnuts or oats (higher carb) to decorate on top

Method

1.     Pre-heat oven to 180 degrees Celsius

2.     Grease a 12 portion muffin tin with butter or spray oil

3.     Put all the dry ingredients: Flour, baking soda, salt and oats into a bowl.

4.     In another bowl, combine the oil, honey and eggs. Beat together with a whisk. Add the yogurt and vanilla, and mix well.

5.     Add the wet ingredients into the dry ingredients

6.     Fold in the strawberries and mix gently

7.     Divide batter into 12 and put into tin

8.     Optional: Sprinkle the top of each with crushed walnuts or a couple of extra oats

9.     Bake for 15-20 minutes, or until golden on top

10.  Set to cool

Variations: 

·     Blueberry or Raspberry Muffins: Swap strawberry to one cup of raspberries or blueberries instead

·     Date muffins: Swap strawberry to ¾ cup finely chopped dates

·     Banana & Walnut Muffins: Swap strawberry to one mashed banana & 2/3 cup crushed walnuts
