Easy Honey Soy Chicken Tray Bake

Ingredients

Serves:

  • 8-10 chicken drumsticks

  • 1 sweet potato

  • 2x medium sized roasting potatoes

  • 2 medium zucchini

  • 3 carrots

  • 2 Tablespoons garlic infused olive oil

  • 3 Tablespoons soy sauce

  • 3 Tablespoons honey

  • 1 Tablespoon wholegrain mustard

  • ½ teaspoon cornflour (corn starch)

Instructions

  • Set your oven to 200°C (fan-forced) and prepare a large baking tray by lining it with baking paper.

  • Use paper towels to dry the chicken pieces thoroughly, then arrange them on the tray.

  • Rinse the potatoes & sweet potato and chop them into small chunks (keep the skin ON for more fibre and nutrient retention). Spread them around the chicken.

  • Cut the zucchini into thick slices and add to the tray along with carrots (or regular carrots chopped into similar-sized pieces).

  • Drizzle olive oil over the chicken and vegetables. Toss everything gently on the tray to coat evenly.

  • In a small bowl or jug, combine soy sauce, honey (warm briefly if thick), mustard, and cornflour. Stir until smooth.

  • Spoon or pour the sauce mixture over the tray contents, aiming to coat as much as possible.

  • Place the tray in the oven and roast for 20 minutes.

  • Carefully turn the chicken pieces and stir the vegetables around for even cooking. Return to the oven and roast for another 15–20 minutes, or until the chicken is fully cooked and golden.

  • Optional step for thickening sauce: Remove the chicken and vegetables from the tray. Turn up the oven heat slightly and return the tray with the sauce only for 5–10 minutes to reduce and thicken. Then add everything back to the tray and mix to coat.
